Would it be possible that users could chose thier own logo for an organic group, say if they decide on a name for their group such as "Team A" and then they could choose from a number of options and set their own custom header, including a choice of colours etc ...? or would this be more suited to it's own individual module based on Signwriter?

I would suggest that this would be better suited to a module which mapped an OG to a signwriter profile, and replaced the title as expected.

This is really outside the realm of what signwriter is about. Signwriter was written to allow a user to define a profile and apply that profile to node content through the use of a filter. We've extended Signwriter to give you an API to use the profiles in your own modules, create profiles through code and access profiles that are on the system, and use a profile to render text... but outside an API, what you choose to do with them is completely up to you :)
