Just in case it helps anyone else, this is just a note to say that I think this may be a suitable solution for adding schema.org type microdata to Drupal 6 sites, as the Microdata module is D7 only. The Semantic CCK module may do something similar.

I was wrong. The module lets you add prefix/suffix markup, only to the Add/Edit form pages, it does not add any markup to the CCK fields themselves.
