It's not clear if there are any serious API breaks (looking at http://jplayer.org/latest/release-notes/) so I think this just needs testing to see if 2.1 works as expected.

Actually, I've been using jPlayer 2.1.0 for quite some time on my local instance of Drupal, so I think there are no issues with the 2.* release of jPlayer.
