Rewrite output of a field

This module is close to perfect for my purposes. I namely try to output a view in a standardized metadata schema.

However, when I check 'rewrite the output of the field', the output is not rewritten. I could change the lable, but that does not cut it. Here's an example of what I need (just an example from this page):

With the module I could only achieve this:

Note that e.g. on the second line the type='photographer' has gone. I could change the label but then it would look like this:
<author type='photographer'>Van Vechten, Carl</author type='photographer'>

Would rewriting be possible?
