I know that JumpBox has a virtual machine that works in VMWare:

I was looking for a VirtualPC image for Windows to set up quick and easy local installations for development and testing. I use Windows but my host uses a version of LAMP which I couldn't reliably replicate with IIS.
I've managed to achieve what I wanted by installing EasyPHP (from http://www.easyphp.org/?lang=en) and installing Drupal as normal. It was fairly straight forward. Only needed the obvious initial configuration like passwords and hostnames, plus a few additional modifications to match my host; safe mode and mod rewrite etc.

I created VMs for Drupal 6
I created VMs for Drupal 6 and Drupal 7. The Drupal 6 install has a number of themes and modules, where 7 only has some themes.
