I'm new to Drupal so I'm not sure if this is something you remove in the Admin menu.

I developed a nice page that features the webform, but it has the publishing information at the top of the page under the header.

How do I remove that?

This is indeed set in the admin menu. It's under Themes, then the Configure tab. Look in the heading "Display post information on".

(I've often thought that this is a silly location for this option, too.)

In the case of Drupal 7... Structure > Content Types > Webform > Edit > Display Settings.

You want to uncheck "Display author and date information."
