There's an extra hop in the journey to create a product from the Products listing. I don't understand it, our users won't understand it, and it wastes time. Clicking "Add product" should take me to a form, not another screen with another button that says "Add product display".

There's another screen because you could have multiple product display types See http://cl.ly/image/19460y200I2W when you're using the demo mode for instance.
We could probably try to integrate https://drupal.org/project/bundleswitcher but I'm not sure it's a good idea to alter the default node form.
