my users don't want to be forced to enter their birthday (privacy)...so the default birthday when creating a new user account shouldn't be the current date...is it possible to have 'none' as the default for all three fields so it doesn't give new users today's birthday?

It's not possible to do easily without patching Core. Because patching Core is not really an option, it will have to wait until I get a great idea or until it is fixed in Core.
