Content that existed before I enabled field_validation can't be edited and saved - an error stating that 2 words are needed appears and prevents updating content, even when the content body 2 mord minimum rule is disabled.

After you diable the content body 2 word minimum rule, you need clear the cache.

You could enable this rule and override it, change it to 1 word.

"content body 2 word minimum rule " is only an example, it is useless, you could delete it if you does not need it.
