Installed APC as you described, did the trick in settings.php
Now, do I also have to turn caching on - presumably to "normal" - in /admin/settings/performance? Or does the APC caching work without that? How to check whether APC caching is active?

APC works without turning on performance caching, but you will not get the benefit of full page caching for anonymous users. I would recommend using "Normal" caching for the full benefit.
