At present, the documentation just says: "Act on entities when updated."
It should also say whether it's called before or after the entity is saved to the database, and if it's called before or after hook_node_update() or hook_user_update(), etc.

Sounds like a good thing to document!

For whoever decides to take on this issue, you can see from the hook page where the hook is being implemented... Interesting. It looks like it's invoked in Drupal 7, but maybe not in Drupal 8 (or it could be that the API site is still having trouble with Drupal 8.x, sorry).

The docs were changed in #221081: Entity cache out of sync and inconsistent when saving/deleting entities and #2700335: hook_entity_update() and friends should document $entity->original. I think this can be closed as outdated. Any further improvements can be made in a new issue.
