The email subject for new users contains the temporary (random) value and should probably display the email address.
Manually you could change the email template but if at all possible hook intercept might be available...

If anyone needs a fix for this, go to admin/user/settings change instances of token !username to !mailto in the welcome email.

There has been no response to this issue, i will leave it up to site owners to modify their own welcome messages.
