I would like to know if it is possible to set a fields collection per bundle.

For instance, the standard profile in a website has the name and the email fields. User A wants to add a hobbies fields collection to its profile, user B wants to add a hobbies fields collection to its.

Not sure I fully understand the question.

Field collections can be set up on a per bundle bases. Users do not have separate bundles though, they all use the same bundle.
