When I try using the update script it goes through the complete process and then it gives me an update failed warning saying that "openchurch-7.x-1.11-beta6-core.tar.gz does not contain any .info files."

I believe you have the wrong download, you want to download http://ftp.drupal.org/files/projects/openchurch-7.x-1.11-beta7-core.zip that contains Drupal + OpenChurch
