I would like to be able to categorize quotes with existing taxonomy and, for example, display a small picture next to the quote based on the category it's assigned to.

categorize with taxonomy - this functionality already exists, as quotes are nodes. Just create a vocab for quotes.

display a picture next to quotes based on category - please look into the taxonomy_image module. Note that this will require a small modification to your theme.
