my /node/add is empty when I go there when logged in as user0. It tells me to go create a new content type as I have none.

I can manually go to /node/add/page and it allows me to do so...

node/add is generated by the menu system

go to administer -> menus
locate the add content menu item
edit it and inspect the menu items there.
