I have installed the module(s) as instructed in the ReadMe, but I suspect I have some kind of conflict because ... I have no idea how to set it up, and there are no site configuration options.

I assume it must be intuitive because I haven't found any tutorials and lots of folks appear to be using this module successfully.

So, if someone can point to a node with a set-up example, I'd be greatly appreciative.

Go and edit your content-type. Then click on "add field". Now you can add a field to your content type, which ist of Typ "Taxonomy Field".

I'm having difficulties using this module as well. indeed i clik "add field", but there are no options under "taxonomy field", althoug i have vocabularies created, should the vocabularies be listed there?

You should add a widget module to have some choice there.
Go to the module list and try to install "Content Taxonomy Options" for example.
