What to do if Drupal becomes unstable?

I installed Drupal for a project that requires MANY modules, eg, Ubercart, and Organic Groups. After installing the module I realized that Drupal becomes unstable, reporting unusual errors. Problems with Ajax, Views, Rules modules and others. I can still finish the project the way it is, but I'm afraid to have serious problems in the future, as this project is still expected to grow. As the project is not finished yet, I have no problem cleaning the content, but there is no time to start installing and configuring everything again.
Is there anything I can do?

What is PHP max memory set to (The status page shows the current value).

Thanks for reply. I have a Cloud Hosting and a few drupal installations running. PHP max memory is 128MB for this site.
