I have just uploaded e-commerce 5.x-3.4 . after trying all the alpha releases without luck. However the "store" component does not select in the backend with the effect that the other components (all depending on store ) do not function properly . Is this an environment related issue or there is something wrong with e-commerce ?

I also get a mass of code when I install , starting with following :

_ec_mail_modref() SERIOUS ERROR! Your system is not functioning properly. Consult your system administrator and DO NOT, repeat DO NOT, modify any mail settings.

are you sure the alpha versions of eCv4 were uninstalled properly from the DB ?

To remove eCv4 and use e-commerce 5.x-3.4 instead use the directions here http://drupal.org/node/119432#comment-511762 (there are other suggestions in the thread as well)
I exported and saved the product table data but noticed the table in v3 was slightly different so I manually entered the product data back in.

You might consider trying Ubercart instead to avoid installation problems, but you'll still need to make sure you've cleaned e-commerce out of the database.

If by "crash" you mean White screen, did you check your apache logs ? are you sure you have not exhausted memory available in php.ini ?

Check the memory setting per VM, and was this a clean install or were you going over top of a pre-existing ec installation?
