I would like to ad more fields to the emailed information. Mainly the Date of a coming event. Is this possible or been done already? My searches could not find anything.

There is no standard Event Date field.

If you're using Notify to inform about future events, put the event date in the title. The title is always sent by Notify.

If you want the notify email to have custom fields, please consider one of the more advanced notification module. Some already have this built-in. This page gives you an overview of the available notifications modules and how they compare.
