Seems to be an issue with function minutes_form implementation. Commenting out the if (is_null($node->event_id)) block seems to allow me to access the manage fields page, despite errors.
Sorry, I'm not knowledgeable to find an actual solution.
Some kind of CCK-related issue?

This should now be fixed in Drupal 6. I confess that I have no idea how to fix it in Drupal 5.
