In IE 7 the second-level menus are positioned too far on the right side for half of the widht of the menus. See screenshot

Since you made customizations to admin_menu's stylesheet, please double-check that you also encounter this bug on http://www.unleashedmind.com/drupal/admin_menu

Indeed, it works on the given link, even in IE6.
I had tried it without customization with the same effect, but maybe made some mistake.
Maybe I've got to remove the module and all tables generated by it completely and reinstall.

FYI: admin_menu does not create any database tables. You can simply replace the module directory with a fresh and clean release.
