Hi guys,
We last updated back in early November 2012 to 7.16, I see 7.19 is most current update available so can I go directly to updating with 7.19 or do I need to go back & update with 7.17 & 7.18 beforehand?

Yes, for minor point releases of Drupal 7 you can jump all the way to the newest one, skipping the ones in between. Just make sure to follow the upgrade instructions, run database updates after you update the code, etc.
