Hi thanks for the module.

When I add a new piece of content I have to click on the panelize tab to enable IPE for that node.

Is there a more global setting, or a way to have IPE enable anyway?

Sure. If you have IPE enabled as the default for the bundle type (provide default must be checked) then IPE will be automatically enabled for all content that doesn't already have a panelizer display attached.
