I have the following selected in user defaults

Add default roles to the user account.

I have a role called technician and a domain called technet, when a user logs in with the role technician I would expect the domain technet to be automatically assigned to them. But when I look at the user account there are no domains assigned, have I misunderstood what this setting does?

You want "Add default roles dynamically". The other setting only applies during account creation.

Sorry forgot about this, I don't want to add roles to the user based on domain rather assign domains based on roles is that what that setting does?

Yes. That's what the setting does. When adding domains dynamically, any time a user is logged in with a certain role, access to the selected domains is added _on top of_ any personal settings for the user.
