The external icon is displaying and working perfectly in firefox. However, not so in IE8.

Any tips would be greatly appreciated.

Hmmm. Just installed the external link module to another site which uses a bartik theme and it works in IE as well as firefox...

My other site, in which it doesn't work is based on a zen subtheme... would it have anything to do with this?

The theme you're using can definitely affect the display of External Links. I would suggest checking your site CSS with Firebug or the inspector in Safari/Chrome to check if the CSS of your theme is overriding the CSS provided by External Links.
