We need to exclude one level from the joined path token. So we built a new "join-path-exclude" dynamic token.

I question how useful this will actually be to the majority of use cases. This seems better for a separate contrib module, not in Pathauto. I would highly recommend putting this in a new module or sandbox and publishing it to Drupal.org.
