I tried using [token node nid] as a token in the Help Text of an Ubercart attribute, but it does not pull in the NID of the product. Other nodes, including global and user nodes, work fine, but I really need the NID. Can it be done with this module?

For tokens to work properly they need to be in the correct context. In this case the cart won't know which node you are talking about, particularly as there could be more than one product in the cart. You will need something other than tokens to achieve your goals here.
