I'm using a simple scripts install, but on each attempt, I get a "something went wrong", and no installation.

I'm a reasonably technical user, but I'm not seeing where there is sufficient logging available for me to identify the source of the fail so I can figure out how to resolve it. Any thoughts are much appreciated. Each time I run the script for Drupal 7.21, I wind up with the install error, but zero detail on what went wrong.

Without a specific error it is hard to say.

I personally just ftp core Drupal over, unpack/unzip, create the database then visit the new site (which will run Drupals install)

I've definitely considered the manual install. The thing with Simple Scripts is that it does a lot to keep me honest when I'm running low key websites like this one (which is just something I'm doing as a favor to a relatively small number of people).

I was hoping that there would be an install log somewhere that would provide the specific error that the Simple Scripts installer UI has apparently decided to "simplify" out.
