So, instead of me having to go through every field and change it from default, it would be way better if I could just change the meaning of 'Default' and directly configure what the fallback config is going to be.

The attached patch re-implements the Default settings as a default, non-disableable preset.

That way it can be overridden in the UI to customize what the default field layout should be.
