How would I go about creating custom Enabled displays for youtube videos? Or, how would I go about customizing one of the Enabled displays, such as the YouTube Preview Image?

The YouTube file formatters can be altered using the same methods that you would use with any other file formatter. See file_entity.api.php for information on file formatters and check out the /themes directory inside of Media: YouTube if you're just looking to do some theming.
