I cannot browse or even see any subdirectories when browsing through imce.... only root and it's files.

I can't reproduce this problem. Which option are you using in your field settings under the IMCE file source settings?

Restricted: Users can only browse the field directory. No file operations are allowed.
Full: Browsable directories are defined by IMCE configuration profiles. File operations are allowed for IMCE 6.x-2.x or above.
