it seems that "Inline entity form - Single value" widget doesn't know how to play for field that have more bundles that can be referenced.

It doesn't seems an usual approach, but it could be.

That's what the "Inline Entity Form: Multiple values" widget is for, this patch would basically make "Inline Entity Form: Single value" and "Inline Entity Form: Multiple values" behave the same.
