Which version is suitable/stable for a production site ? the beta or the dev version ?

Unfortunately both versions are not recommended. There are several issues as you can see in the issue queue, like this one. This module is currently not actively maintained, so I'd go for another spam protection module like Mollom, which is actively maintained and stable. However, the captcha module is not bad if you just want to use a captcha for just some single forms, which haven't AJAX widgets or something similar.
