When creating a manual order from the backend, is the products deducted from the stock? - And what when cancelling a checked out order, will the products be put back on stock?

Currently no order back end integration however rule actions for Increase Decrease stock are available and custom rules can be setup.
If you search the issue q you will find discussions and possibly solutions for this.
