Strange/special characters inserted into email body

I'm getting special characters inserted into the body of my emails when I use mimemail.

for example:

Â
New milk handling procedure – please see dietetic homepage
Â

The  is inserted instead of an :nbsp; and the – instead of a hyphen.

Does anyone know how I can stop this from happening?
