which one should i choose whats the major differences between them?
if i choose 6 can i upgrade it to 8 later on or will there be compatibility problems?

8 is not available and 6 is almost end of life (it will be unsupported when 8 is released). That leaves 7. And major versions are always incompatible but there's always an upgrade path, though I prefer to rebuild and migrate data instead.

so if i want to upgrade from 7 to 8 i just gotta rebuild and migrate data ? would that work with the database?

On a simple site the upgrade path may work fairly well. On a complex site it is often a pain, which means migrating data. It works if you make it work, but it may require some skill, it not just a couple of clicks. Unfortunately we are not likely to see Drupal 8 in a stable release before early 2014.

Drupal 8 is currently in the early stages of development. So it is highly recommended that use drupal7 because drupal7 has more features and enhancement than drupal6 and will also supported longer.
