On my webform I have an expiry date field that the user would choose a month and year. My goal is to omit the day field. I did change the short format in admin/config/regional/dateandtime to a custom format of MY but on my form I still get the option to choose a day (albeit it is now in the front - ex: Day/Month/Year).

How can I get rid of the day option?

You can't currently. There is an existing feature request at #336150: Make Day/Month/Year Optional in Date Component.
