My housemate did an iPhone theme based on Garland, and I share it here for you. I don't have an iPhone so I don't know much about this personally, so I can't really help if you have questions. But I bet other people here can!

Here are his instructions:
So if you're already running SummerBoard on your iPhone, you can connect to your iPhone via SFTP (http://superfluousbanter.org/archives/2007/09/customize-your-iphone-dock...) and drop the unzipped iGarland directory into:
/private/var/root/Library/SummerBoard/Themes/
It should then appear in your list of themes in the settings for
SummerBoard.
If you're NOT running SummerBoard yet, you have to install it first. For
more information on THAT, check out: http://www.apptapp.com/summerboard/

So this theme works for iphones? How does Drupal know when someone is accessing from an iphone and therefore switch to this theme?

my understanding is that it's a phone theme for the iphone. Thus it themes the phone and not a drupal website.
Ah
I see. I'm trying to find a way to enable my drupal site to work with iphones, if only for certain portions even. If anyone can point me in the right direction, that would be much appreciated. My brain is fried right now.

I believe there is a mobile phone theme in the downloads area, mobi it may be called, or mobiloader or something to that effect.

Seems you should look at the http://drupal.org/project/mobit module for switching these and also at the http://drupal.org/project/iui theme, however looks like both are a bit outdated now.
