I have been struggling now for more than a month in setting up and understanding the concept of the eCommerce module on information that I can find.
Is here anyone who has a good "up to date" explanation on how to install this module and how to use it?

but apparently they are using an older version of this module and even if I use the correct version it still doesn't enable all the modules automatically when for instance you
Navigate to the Modules page via Site building » Modules. Find and click next to the Store module and then click "Save configuration" at the bottom of the page. This will install all of the main e-Commerce modules.

although I appreciate people who post a videocast about the use of a module the version he uses is apparently outdated and no way I can get the same kind of installation he has. So, not suitable to follow his instructions.
Here's what I would like to set up (if that is possible with this module):
I would like to create an online store for beverages:
- customer can select multiples of 6 bottles of a "live" updated stock list (number available not visible to customer)
- after selection -> payment (paypal)
- after payment:
1. confirmation email with delivery schedule sent to customer
2. stock list is updated
3. invoice for this order appears in a folder on the server
4. delivery note appears in a folder on the server
As administrator I would like to:
1. be able to access the current stock list
2. be able to print the current stock list
3. be able to print a sales report.
4. to add quantity of stock when there is new stock
5. to add new products
6. to add bigger orders myself for customers while payment doesn't happen online
can anyone tell me if this is the right module to explore and mess around with? if so, what modules do I need to install to accomplish this task?

http://drupal.org/project/ubercart? You may have invested a lot of time in learning E-commerce, but Ubercart is far more intuitive and a better choice in the long (and short!) run. Run your specific requirements by the Ubercart team at http://ubercart.org to check whether it'll cover everything.
