Depends on the amount of modules being used, the amount of users being online , so on so forth. The more RAM the better IMO.

If you ask nicely I'll give you a towel : )
Yes, unfortunately the more RAM the more it costs too.
At this point I'm only looking at a dozen or so users but there'll be more as it kicks off. Even down the track there's rarely likely to be more than a 10 or 15 on at any one time.
I've got 25 or 30 modules some big ones, some little ones.
Eventually I plan to have a few more sites on it, one Drupal installation with a multi-site configuration, but I can always upgrade when I need to.
I just recently moved my website from dreamhost to FutureHosting.biz. So from shared services to a VPS solution. It costs me just over $40USD a month and i get 512mb RAM thanks to a free upgrade.
It was the best move i made. My site went from 100 visits a day to 20000 overnight and the shared hosting just couldnt cope with 300 visits so i was stuffed till i made the decision to go to VPS. Now i average 1500 visits a day with a peak of 6000. there can be upto 500 people on the site at once and the VPS doesnt even break a sweat.
I have 35 modules enabled and normal caching with css caching turned on with a 30 min life. This helps a lot.
Its a forum that contains just what it says. Discussion about all the hosting options you can get. One of the great benefits is that it has an entire section dedicated to Vouchers and Offers from the hosts themselves. They come in and post up offers for people to know about. Thats how i got mine.
I can fully recommend you use a VPS without control panel running CentOS4. I just moved from a Plesk VPS to this system for performance and to standarize installations (Plesk creates too many "proprietary" folders) and it is great.
For US$49.00 a month you get a fully managed VPS with awesome fanatical support from the company.
I've been hosting with them for years after trying many of the big ones like Rackspace, EV1Servers, etc.
Don't take my word, just go and review their packages and call them, they are incredibly friendly and efficient. :) If I were a hosting company I would want to be them. Seriously! They are in the States (Virginia).
The good thing is that you can always upgrade and escalate in a snap. It is not an open-source VPS, but a Virtuozzo one, but they have the biggest farm of Virtuozzos, so they provide vast experience on that.
I hope this info helps.
As I said, I really don't care if you go with them (I have no stocks), but you should give them a try if you are serious about going VPS, they've been around since the 80s I believe.
This is just my suggestion. I'm sure there are other hosting companies, but since I'm with them I've never needed to ever change, and people I recommended they are very happy as well.

The URL to the lowest VPS : http://www.servint.net/vps/index.php#essential
They have this new product called SuperVPS, that is a good example of escalation when you need up to 4 GB Burst RAM: http://www.servint.net/supervps/index.php
