I really love this module - it's a must have on every site I do.

I have some concerns, but no specific empirical evidence - could it be possible that we need to be sparing about the frequency we submit our sitemap to the search engines? Could we be penalised if the site map is submitted many times a day, even if it's a legitimate notification that a new entry has been added?

TIA for any advice on this matter.

You really don't have anything to fear IMO. As your site continues to grow and increases its frequency in how often it gets updated, Google will crawl your site appropriately. This is why they have the crawl rates graphed out for you under the Google Webmaster Tools. In addition, almost all sites have the "Fast" option grayed out so you have little to worry about. Just submit your sitemap and Google should take care of the rest.
