Let me to give some ideas for a simple dating site

For me a basic dating site should have these features;

1- Deatailed profile pages, which include mandatory things like name, country and spesific things like smoking, drinking etc.
2- Ability to chose access levels to those fields for example regular members only see name and country while premium members can see detailed page
3- It should have diffrent levels of access like regular, silver, gold member
4- Webmaster should be able so sell each level from site by credit card
5- People should be able to search other members by using a detailed search form
6- Members should be able to message eachother
7- Desired levels should be able to create their photo galleries
8- There should be a newsletter subscription inorder to keep your members coming back to your site.

You should use these modules to have such features

1- Bio module for having profile pages as "node" (which is pretty important because core profile module is pretty basic)
2- CCK for adding fields to profiles
3- CCK field permissions module to hide fields from users who have lower access level
4- E-commerce to sell access levels (which are roles in drupal)
5- Private message module (I think name explain its function)
6- Views to have custom lists and views filters to filter those lists according to user selected parameters (What a shame we still don't have CCK search module)
7- Image and Image access module to have private image galleries and restrict those galleries to lower members
8- Simple newsletter module to have newsletters

These are first thing I can think now. I think you should checkout other dating/community sites and note each feature and then ask which module offer that functionality.
