Just curious, is there any way to have this functionality in Drupal 5.x? If not by a module for 5.x, how about through theming?

I'm planning a site right now that needs this type of functionality.

Nope, just use the Menu Trim module. It is a bit more flexible, in some way, but also more difficult to config. Anywayz, this module was enterily build around the new written Drupal 6.x menu API, so I'm not going to port it backwards. But feel free to do so :)
