The Modules page has a "Browse by date" tab. Can anyone tell me how I can (a) add this tab to my nodes? (b) make it the default view?

One way of doing it would be to create a menu that links to the appropriate views (sorty by X, sorty by date) and output the menu block wherever you want using custom regions and style it with CSS. The menu is your tabs.
