I am looking for THE tutorial on theming a photo gallery I am playing with on my site.

Really I want to know how to tell Drupal where to find my custom .tpl.php and how to find the fields to format… is there a way to put the print_r thing into a view?

I'm not really sure what you're asking-- drupal already has a hierarchy for finding custom tpls. You might want to check out the very excellent screencast on Themeing Like a Pro as well as the handbook on the phptemplate engine (which already lists the variables for you).
