Overide $title

I'm wondering how could I override the title ??

I'm using a "node-{type}-tpl.php" file to overide the main layout but the title always show up?? I found that in the template.php, the variable is imposed in some way to all content type !?!?!? How is it possible to overide it for only one content type ??
