I love drupal. EXCEPT.... the user interface is pretty bland.

How hard would it be to modify the themes to do something like this htt p://w ww.boonex.us/

Is it even possible?

Yep it's possible: remember that anything that is possible with PHP and HTML is possible with Drupal.

The modules that will help in achieving something similar to the site you linked are Panels, mini Panels and Views. They allow you to break the page up into columns / grid, etc.
