how to assign edit permission to a specific user

If the admin can't handle all the contents by himself, is it possible to assign edit permission to a user, only for a specific content ? if yes, could you please tell the procedure?
for example:
user1 -> content1
user2 -> content2
user3 -> content3

Yes, there is a way. First of all, you could assign the users to roles and allow specific roles to edit specific content types.
If you go to Administer >> User Management >> Access control, you will see to columns of checkboxes: Authenticated users and Anonymous users. These are roles.
To create a new role, go to Administer >> User Management >> Roles
After doing so, you will have a new role under the Access control page.
You can then allow this specific role to administer specific content types. Do that for however many roles you would like.
You can then assign users to specific roles by going to Administer >> User Management >> Users and clicking the user you would like, then edit. Mark the checkbox for each role you would like them to have. They now have access for everything within that role
There may be a module that allows you to assign this per user, but I'm not familiar since I haven't had the need.

I have one user that i would like to be able to edit the contents of one book. I have created a role and allowed editing of "own content" for pages and stories. I have also assigned the role to the user.
How do I tell Drupal which book this user is allowed to edit?
I know there must be a way, but I can't find it.

Since this thread has nothing to do with books, you'd be better off posting a new topic.
In any case, acccess control per book is not part of core drupal. You may want to checkout the http://drupal.org/project/book_access module.
