Is there a way to edit my links in the "go list". I can add, remove, reset the counter, but there is no option to edit them. This seems very odd that I can not edit a redirect.

Also, are these links tracked by analytics? What I mean is, if I have a link on my page that goes to mysite.com/go/outboundlink, this links to www.somesite.com. would the click to mysite.com/go/outboundlink tracked? With pathredirect it is not. So I thought I would ask if it is here.

Yes all Go URLs are tracked. You can view this in the "counter" at yoursite.com/admin/build/gotwo

Regarding your other query, I'm marking this post as duplicate of #233863: "Edit" URL operation

This will be worked on in the next update for the 6.x then possibly backported.
